What is your must-have kitchen item?

A good sharp knife. I’ve been collecting them over the years and I always like to get new ones.

What would you have for your last meal?
I’ve done a rack of lamb that’s seared with mustard, bread crumbs and a mushroom sauce. I’d have that with a nice Switchback [Brewing Co.] beer from Vermont.

What is your favorite local restaurant?
Cotton [in Manchester] is pretty good. I’ve also got a hankering for barbecue at KC’s Rib Shack [in Manchester].

What celebrity would you like to see eating in your restaurant?
Anthony Bourdain. He’s my idol. I like everything about him.

What is the biggest food trend in New Hampshire right now?
I think it’s always important to have a burger [on the menu], no matter what kind of restaurant. … That was important for us … because everybody is familiar with it. It’s kind of like a safe thing and you can customize it and make it your own.

What is your favorite thing to cook at home?
I like to just make concoctions, like [from] whatever is in my fridge. I usually end up making a pasta dish of some nature.
